Today, the pearls of Japan in coconut milk from pastry chef Christophe Michalak.  

Ingredients :

  • 1 liter of water

  • 200 g of Japanese pearls

  • 200 g coconut milk

  • Maple syrup (or honey)

The steps of the recipe: 

1.

 Boil the water and add the Japanese pearls.

2.

 Lower the heat and cook for five minutes.

Stop cooking and, off the heat, let the pearls swell for two hours.

3.

 Rinse the pearls in a sieve under cold water, then set them aside in a bowl.

4.

 Season with coconut milk and set aside overnight in the refrigerator.

5.

 When ready to eat, serve very chilled and pour in a good tablespoon of maple syrup (or honey) per minute.
