My mother's rice pudding versus Cristina Oria's rice pudding
Old-fashioned cheesecake, in less than half an hour
What does Zarina's cheesecake have that conquers everyone?
That it is soft,
sweet in just the right measure,
fresh -perfect for the summer-, and that it has a special and characteristic semi-liquid finish that is decisive.
Zarina herself
-with her
real name
María Parejo-,
who is behind this pastry and savory brand, shares her star recipe ...
very easy and delicious.
Ingredients
For the base
200 g of crushed biscuits
130 g of cold butter
For the rest
6 eggs
850 g of Philadelphia cheese
250g white sugar
650 ml of whipping cream 38% MG
Ingredients by hand?
Ready ...
Preparation
First, you have to
line the base of a
removable 26 cm
mold with
greaseproof
paper.
The
cookies are
then crushed
and mixed with
the butter.
This mixture serves as a base and is placed in the mold, squeezed well with your fingers or a spoon, and put in the
freezer
to cool.
Meanwhile,
the remaining ingredients are mixed
in the mixer (or similar food processor), the result is added in the mold that we had in the freezer ...
and in the oven!
Bake
time is
35 minutes at 200 degrees
(Bake time may vary depending on the oven).
To know that it is well done, when the cake comes out it has to
dance as it moves,
because it finishes curdling out of the oven.
Once out of the oven, the cake has to rest
at least 4 hours
before eating it.
The expert's trick.
If you want to give a different touch, you can add some
blue cheese
to the mixture (as long as you like it).
Zarina -María Parejo in the DNI- in her element, surrounded by cakes and sweets.
Who is Zarina
If her name doesn't sound like anything to you, and you live in
Madrid and its surroundings
- sorry, she can't be everywhere, although she would like to, she has a restless heel - you're taking time to sign Zarina.
To say that each and every one of their cakes is a delight is an understatement.
We assure it but not only:
Malena Costa,
Paula Echevarría,
Eugenia Silva
and Sara Carbonero are also palates who have given more than approval to the 'works' of María Parejo, aka Zarina-.
But the company of this Madrilenian lives not only famous;
Greats of fashion, beauty or the economy
(eBay, La Prairie, La Mutua or Tous)
require your catering services in their large events.
They say that even the CEO of
Bankinter,
María Dolores Dancausa
and her sister
Concepción,
former delegate of the
Government in Madrid,
have fallen for Zarina.
On television, she has been a pastry teacher for the contestants of
Masterchef Spain
in 2014 and 2015.
But María, Zarina, was not 'born' a confectioner. Or almost yes, her passion comes to her since she was little, but she studied
Law at the Complutense University
and practiced as a lawyer. Until
in 2011
, after years and years sweetening the lives of her family and friends as an amateur pastry chef, she decided to wrap the blanket around her head and dedicate herself only to her passion. Time has shown that the decision was the right one.
What started as a small cake company,
Las Tartas de Zarina,
is today
Zarina Dulces y Salados.
Their best-sellers?
In addition to the semi-liquid cheesecake,
the carrot cake,
the chocolate with
Guinness beer
and the lemon, a classic that in your hands is different and surprising, they are worth tasting.
Ah!
Why is she called Zarina?
"Because I am the youngest of four brothers and my father called me zarina
like someone who calls a princess ...".
And Zarina has stayed for family, friends and clients.
Zarina sells online on her website.
