Chef Merlin Ella's Sleeved Chicken Drumsticks
Preparation time: 30 min
Cooking time: 20 min
Ingredients.
For 4 people.
- 1kg of chicken drumsticks
- 3 tbsp of soy sauce
- 1 tbsp of honey
- 50g of ginger
- 1 clove of garlic
- 1 tsp of turmeric
- 1 bunch of basil
- 20 cl of olive oil 'olive
- 50g of butter
- 2 tablespoons of paprika
- Sesame seeds
- Salt
- White pepper
Preparation
Step 1: Sleeve your chicken drumsticks, lift the skin of the chicken, make two large notches to allow you to stuff them, season them with salt and pepper, in the slits, put the minced ginger, paprika, soya, honey , garlic and turmeric, coat them with basil leaves, lower the skin to cover everything and let stand a few moments in the fridge so that the herbs infuse well.
Step 2: Heat a pan, pour a drizzle of oil followed by a knob of butter, mark your poultry over medium heat for 5 minutes.
Step 3: Finish cooking in the oven at low temperature, roast the sesame seeds, sprinkle them on a platter, roll your chicken drumsticks on them after taking them out of the oven.
Serve with a roast of young potatoes cooked in a field dress
Mango & lime crumble recipe by chef Anto
Ingredients
50 g flour
50 g peanut powder
50 g softened butter
50 g sugar
2 ripe and firm mangoes
1 lime
Preparation
Wash and peel the mangoes.
Cut the flesh into cubes and put them in a gratin dish.
Zest the lemon on the mango cubes
In a salad bowl, mix the tant pour tant until the mixture is homogeneous
Sprinkle on the fruit
Bake for 15 minutes at 180 ⁰C, serve lukewarm
