The opportunity to discover three products from the south of this department and its surroundings: peppermint from Milly-la-Forêt - a commune in Essonne bordering Seine-et-Marne-, Fontainebleau cheese and a beer of Villiers-sous-Grez.

Peppermint ... in liqueur or in custard

Cultivated since the 18th century, the mint of Milly-la-Forêt is "very minty, very powerful", describes Yves Camdeborde.

Nothing to do, therefore, with the sweet mint that is also used in cooking.

This peppermint can be difficult to taste raw.

On the other hand, "it has a lot of qualities for infusions and pastries", indicates our chef.

This one recommends using this mint in a custard recipe.

"When you boil the milk, put a bunch of it in the milk and let it infuse. Your custard will remind you of the taste of After Eight (a brand of mint confectionery,

50 years ago, Milly-la-Forêt had around fifty peppermint producers.

Today, only the producer Catherine Bosc-Bierne remains in this territory.

And Ophélie Neiman advises to taste his peppermint liqueur at 18 degrees alcohol.

Fontainebleau, a cheese to pair with strawberries 

Another product from this region: Fontainebleau, a cheese exclusively made from cow cream.

"It's whipped and whipped cream," says Yves Camdeborde.

Our chef recommends an "association" with strawberries, "very pleasant" according to him.

Blond beer from Villiers-sous-Grez

Finally, Ophélie Neiman offers blond beer from the 77 Craft brewery by Miguel Garcia, in Villiers-sous-Grez.

The hops used to produce this beverage come from the surrounding area and are harvested by hand.

At stake: a tangy beer with "aromas of exotic fruits and citrus".
