    We talked about it with Mercotte.

With two more candidates in the running, Alsace is in the spotlight of the

Best Pastry Chef

 this season on M6.

But Strasbourg Siham and Haut-Rhinoise Elodie will not be her only representatives on Wednesday evening.

A special program on the region is scheduled.

For the greatest pleasure of Mercotte.

Why was Alsace highlighted this year?

It was not me who chose but it seems quite normal to me.

It's the realm of pastry chefs, still happy to be making a special show!

Three quarters of the great pastry chefs come from the region.

I am thinking of Christophe Felder, Pierre Hermé, Thierry Mulhaupt and so on.

How do you explain this density?

I don't know, maybe because people are very greedy in the area!

In winter, it feels good baking, it's comforting.

There is a real pastry tradition in Alsace, it is undeniable.

If we are talking about Alsatian gastronomy, what do you immediately think of?

I'm definitely not going to fall for sausages and sauerkraut!

I am thinking more of the Auberge de l'Ill (in Illhaeusern) where I have already eaten, or Olivier Nasty's restaurant (in Kaysersberg).

But we must not forget the excellent wines that are also tasted there.

And in pastry, your favorite field?

Already, I am a fan of Christophe Felder's books.

They are really great with recipes accessible to all and well explained.

Alsatian cakes, I know.

If I have to name only a few, I will say gingerbread.

They are exceptional there, even if there are some elsewhere too, such as in Dijon.

The little Christmas men, the Mannele, are delicious.

It's good that I'm talking about it since it will be on the program on Wednesday.

The candidates will have to realize some for the challenge of Cyril (Lignac)

Your event will be devoted to the creation of a “storichenescht” that no one has ever eaten here!

This is normal because we are always looking for an unknown cake!

I prefer to talk about the stork's nest.

It's a multi-story beer cookie with plum, brandy, and chocolate eggs.

I admit that I discovered this recipe at the same time and to have tasted it, it's good!

I would add that it is not very complicated, it is less of a puzzle to make than other cakes.

Pierre Hermé was invited to check the achievements.

Like all of his predecessors, he will go around the tables, say what is wrong or give advice.

The candidates are always very moved to see him, he is often their idol.

I even saw some cry to meet him!

He is nevertheless the most famous pastry chef in the world.

Did all of this make you want to come back to Alsace?

I have been to Strasbourg before, I love it, to Colmar and elsewhere.

So, for now, I'm confined.

My friend Christine Ferber asks me every year to come and see her in her village with an unpronounceable name (Niedermorschwihr) but I never have time.

I'll have to go!
