Like Pierre Perret, who delivered his version of the summer salad a few moments before him, Laurent Mariotte gives a fresh recipe, perfect for summer, using old tomatoes in the Table des bons vivant. 

Ingredients:

1 kg of ripe old tomatoes at room temperature, different colors

A dozen basil leaves

Fleur de sel

Olive oil

(Ingredients for the dressing)

1 tablespoon wine vinegar

4 tablespoons of very good olive oil

1 teaspoon of sweet mustard
1 ginger nut

Salt

Pepper

Production : 

In a bowl, peel and grate the ginger, mix it with the ingredients for the dressing and emulsify with a fork.

Remove the peduncle of the tomatoes, cut them into quarters and divide them among four plates. Drizzle with vinaigrette and finish with a pinch of fleur de sel and a few hand-torn basil leaves.
