In the Table des Bons Vivants, Yves Camdeborde gives you his recipe for Lorraine quiche, a must for Sunday brunches, as his father did before him.

Ingrédients :

2 eggs

30 cl whipping cream

100 grams of grated Gruyère cheese

Salt, pepper, nutmeg

200 grams of bacon

½ chopped onion

200 grams of shortcrust pastry

Preparation:

Preheat the oven to 180 ° C.

Cook the dough white: darken your shortcrust pastry in a pie pan, cover with parchment paper, and place lentils or dry beans. Bake for 15 minutes.

Brown the bacon in the pan with the onions and a knob of butter.

Combine eggs, cream, Swiss cheese; season with salt, pepper and nutmeg.

Place the bacon and onion in your pie shell, cover with the egg mixture and bake for 40 to 50 minutes in the oven at 180 ° C.
