350 grams of halibut fillet without skin or bones

8 very thin slices of baguette cut in bevels

1 lime

2 sprigs of flat parsley

2 sprigs of basil

1 drizzle of olive oil

Fine salt and freshly ground pepper

Production : 

Cut the fish into small dice (avoid chopping them in a food processor) and place them in a bowl. Add the finely chopped parsley and lime juice. Season with salt and pepper.

On the work surface, place four slices of bread, spread out the seasoned fish and place the other slices of bread. Press lightly. In a skillet, with the olive oil, brown these mini sandwiches for three to four minutes on each side.
