" He is crazy ! " This comment, Michel Bras and his wife most often heard it when they formed the project for this restaurant, a glass vessel overhanging the Aubrac plateau in the heart of France.

A restaurant, wide open on nature, visceral source of inspiration for Michel and his son Sébastien, chefs in love with their land, their territory: L'Aubrac, a raw land, simple, rough, far from everything, but united .

Michel Bras was one of the first in the 80s to offer dishes entirely made of vegetables on his menu, some of which had become: the gargoyle, a composition of flowers of herb petals or the taste of nature, a garden and from season to season, on the plate. In their book moreover, the taste of the garden is declined in a series of culinary intentions for the 4 seasons, of which the first, let us intend of season: the Gargouillou with for ingredients of the garden, a list like a poem: Orpin, sorrel blood, bear's garlic, 4 mustards, Greek valerian, sagebrush, round sorrel, catnip, licorice, pimprenelle, chrysanthemum, scallops, chives, Moroccan mint, spinach-strawberry, dog-tooth erythrone, arugula, Moroccan cress, valerian phu…

11 intentions follow, like recipes without instructions, a series of impressions like an invitation to travel.

Spring intention n2 , from countries. The open ground endive poached in a tandoori broth, lassi with raw milk from here and tangy cooking juices, marinated seriole and blood sorrel.

Ingredients from the garden: endive, 4 sorrels: red, silver virgin, scutatus.
