And the "surprise", for the Riviera professional, came from the National Confederation of French Bakery and Pastry (CNBPF) itself.

"Let us not let a baker damage the image and reputation of 33,000 others," said the association on its Facebook page. An "attack" addressed to Frédéric Roy, whom BFMTV questioned a few days earlier on his request for a decree. The Niçois had launched the idea of ​​establishing a “tradition” label for small viennoiserie, as it already exists for baguette.

"Hundreds of supporters"

For the CNBPF, the problem comes from the advanced figures. "To say that 80% of bakeries sell frozen croissants is false," notes the confederation. " I never said that. I say that all the pastries sold in France are 80% industrial. That includes what is also sold outside the bakery. And I am only repeating the only figure that exists and that is given by the Federation of Bakery Companies, "replies Frédéric Roy, who considers himself" strongly attacked ".

He claims to have received hundreds of supporters since the publication of the union, which was explained in a second post. "Our survival is obviously" homemade "", supported Dominique Anract, the president of the CNBPF, assuring "to work hard to find a solution allowing us to reconquer our market".
