On the 31st of Omisoka, Matsue City's soba shop is crowded with people who want to eat the famous Shimane prefecture's specialty "Izumo Soba" and go over the year.

A long-established soba shop in Matsue city, which has been around for 70 years, has been lined up by about 30 people before it opened at 11 am to try New Year's Soba.

"Izumo Soba" uses buckwheat flour with the cuticle inside the buckwheat husk, and is characterized by its black color, rich flavor and aroma, and strong stiffness.

The dough was thinned out using a stick, and the knives were used one after another. Omisoka seems to be the most visited customer in one year, so she enjoyed the specialty of "Noriko soba", which is a three-tiered buckwheat noodles placed in a lacquered round bowl.

A 46-year-old man who returned from Osaka with his family said, "Izumo soba is nostalgic and delicious. I hope next year will be a good year." Mr. Hiroshi Sato, the store owner, said, “I want to eat a lot of new soba noodles that I've been laying down now, and I want everyone to eat a lot.
