Every morning, Monday or Friday, a chef delivers to the microphone of Europe 1 a recipe of his own, ideal to serve at the holiday table. On Tuesday morning, Chloé Saada, head chef at La Pâtisserie de Chloé on My Cuisine, and who has largely contributed to popularize the cupcake in France, offers listeners from Europe 1 - once is not custom - a salty recipe: his "fish kefta". Ingredients
4 fillets of seabream (or cod)
120 grams of stale bread
Two eggs
Half a bouquet of mint
Half a bunch of parsley
Two cloves of garlic
An onion
A little flour
Paprika and harissa (according to convenience)
Olive oil
Salt and pepper
The preparation
Chop the fish, ideally using a blender. Stir in the eggs, herbs, garlic, onion, spices, salt, pepper and stale bread that you have moistened.
Mix everything until you get some kind of dough. If it seems too liquid, use the flour to densify the material.
Form small dumplings with your preparation, and thread them on a skewer. Come to grill everything in a pan, with a drizzle of olive oil.
