After the rejection of the appeal of the owners of Marseille bars and restaurants by the administrative court on Wednesday, it is on the side of Paris that we are concerned.

As in Lille or Lyon, the figures for the epidemic are bad.

The Minister of Health is due to speak Thursday evening, but restaurant owners already prefer to prepare.

REPORTAGE

"Olivier Véran must speak this evening".

This simple sentence is enough to terrify the owners of bars and cafes in a dozen agglomerations: those on heightened coronavirus alert which could, for some like Paris, pass into maximum alert zones.

The fear: having to close its doors, as in Marseille or Guadeloupe, for two weeks at the end of the week.

Europe 1 went to meet the Parisian restaurateurs who live with a sword of Damocles above their heads.

And even if they have no certainty, they prefer to prepare for a possible closure.

Reduced pantry, daily orders

"These refrigerators as normal are all full. There, it is restricted to two stamps", shows the head of "Baudelaire", Guillaume Goupil.

The restaurant's pantry is almost empty and the specter of another closure has got the better of his restaurant menu.

"We are going to work on a just-in-time basis: we are going to place orders on a day-to-day basis in relation to customers who have reserved, and have a minimum of stock to plan for this potential closure," he explains.

In a brewery in the neighboring district, the boss goes even further: he told his room manager and his chef not to order for the moment.

"I am convinced that we will close"

Even if the measures that the government could announce on Thursday evening are not yet known, Stéphane Manigold, owner of four restaurants in Paris, believes that it is an open secret.

"I am convinced that we will close," said the one who took the lead.

"We validated this morning eco-responsible packaging in order to be able to carry out take-out sales, we made the proposal to the mayors to be able to put take-out sales areas on the terraces which will be empty when it will snow and rain", details the owner.

"Leading is planning, you have to anticipate. You don't wait for directives to put yourself in order."

For all restaurateurs and cafetiers Thursday, the evening should be the same: an eye on the product, a hand on the knife and an ear on the statements of the Minister of Health, who should invite himself in spite of himself in all the Parisian kitchens .
