In Île-de-France, cafetiers and restaurateurs still do not have the authorization to reopen their dining room, hence the financial situations which are still difficult for some. "There are some businesses that opened and then closed," said a restaurateur from the 15th arrondissement on Tuesday on Europe 1.

REPORTAGE

The reopening of terraces in Île-de-France is not enough to achieve profitability for certain restaurant professionals. Without their room, it is difficult to ensure a sufficient number of seats, all the more when the weather has fluctuated between gray and rain for a few days, as Parisian professionals said on Tuesday on Europe 1. "It is very precarious, I call my employees at the last minute, or not, and I put those I don't call part time. It is a daily management at 11 am in fact ", testifies Corinne who manages the restaurant Le Petit Voisin.

"Everything gets complicated"

"Everything becomes complicated. To manage stocks in the kitchen, we are very careful. We threw away on March 14 that we are very careful," adds the restaurateur.

"It remains very calm"

So much so that some professionals have taken a radical decision: do not reopen on June 2. This is the case of Virginie, the owner of the restaurant Corso library, in the 13th arrondissement of the capital. "Last week, we went every day to see a little bit of what was being done in the neighborhood and we see that it remains very calm. There are some cases that have opened and that have closed," he explains. she.

Flexibility demanded by professionals

Virginie aims to reopen her establishment "on June 22, at the same time as the cinema". "We are right next to a cinema, so we hope to have a little more activity with cinemas," she said.
