INTERVIEW

You have probably already tasted a fruity beer, strawberry or peach for example. But a Toulouse company had an original idea to say the least: make a beer with ... chocolateine aromas! "This beer also tastes like chocolate bread," smiles Anne-Sophie Bigot, co-founder of the company Ice Breaker. She explained Tuesday morning on Europe 1 the recipe for this amazing drink.

"It's a beer against food waste"

But before arriving at this dark beer of 7 degrees, called "Nothing Toulouse", it is necessary to recycle chocolates. "Obviously it is not a beer with pieces in it, since it must be drunk. But the manufacturing process includes real chocolatines which we will collect in many different bakeries. We collect unsold products at the end of the day is a beer against food waste, "says Anne-Sophie Bigot.

"We are going to make it a concentrate and add it to the brewing vat. The day before brewing, we are going to cook the chocolatines and degrease them cold, then repeat the operation to remove a maximum of fat which would harm brewing. Then , the next day, we will incorporate this concentrate at the time of boiling during brewing, "she explains.

"Like a little milk chocolate, but in beer"

Anne-Sophie Bigot also defended dark beers, which can put off many consumers. "Many consumers have the idea that dark beer is Guinness. But we created this beer to show that there are lots of different flavors in dark beer. Here we are going to be on something very sweet, like a little milk chocolate but in beer. In summer, you don't necessarily have to drink a lot of dark beer. But there you can enjoy it very cold as an aperitif. "
