Even if it is recommended to limit your outings during confinement, there is no question of giving up weekend cakes. If you miss some of the ingredients of your usual recipes, don't panic: our journalist Marion Sauveur explains how to bake with what you have (even in the absence of an oven!).

You lack the ingredients to make your favorite cake recipe, and you want to limit your outings to respect confinement as much as possible? It may be time to adapt your usual pastries a little, with what is left in your cupboards. For that, follow our advice to make basic but delicious cakes, even without flour, for example, or even without an oven!

What are the basics?

With few ingredients, you can make several different cakes:

  • Flour + sugar + eggs + butter = pound cake or cake base (adding fruit)
  • Flour + sugar + butter = crumble dough (with fruit) or cookies: shortbreads (1 measure of sugar, 2 of butter and 3 of flour)
  • Flour + sugar + eggs = sponge cake

How to make a sponge cake?

The sponge cake, delicious in nature, is normally a cake base: it can be cut in half and garnished with jam or spread, for example. For proportions, just weigh the weight of the eggs without the shell and take the same of flour and sugar.

The recipe steps

Mix the egg yolks with the sugar (whisk well) until you get a frothy mixture.

Beat the egg whites and then gently add them to the mixture.

Add the flour three times, mixing gently to keep it fluffy.

Put the dough in a greased pan, and cook until the cake is golden

To vary the pleasures, you can replace part of the flour with cocoa powder or hazelnut powder ....

How to make a cake without an oven?

With a pan! You then need a few more ingredients: sugar, eggs, flour, yeast, milk, salt, butter and fruit.

The recipe steps

Mix your eggs (2) and your sugar (100 grams) until you get a frothy mixture.

Add the flour (100 grams), yeast and salt. When the mixture is homogeneous, add 10 cl of milk.

In the hot pan, melt the butter (30g), before browning the chopped apples (or pears, bananas, ...)

And when they start to brown, add the dough. Leave 10 min covered, especially over low heat.

When it starts to brown (consistency of cake, more liquid), take a plate to turn the cake over, before browning it for a good 5 minutes on the other side.

How to make a cake without flour?

It is possible if you have cookies, preferably plain (brown tea, small Lu ...). The recipe is easy to make with your children.

The recipe steps

Mix sugar (100 grams) and egg yolks (2), then add the softened butter (120 grams).

Beat the egg whites and add them to the preparation

Dip each cake (about fifty), one at a time, in a large bowl of strong coffee

Lay a layer on a dish, cover with preparation, then cakes, etc.

Leave 12 hours in the fridge, then taste!

You can use milk instead of coffee, garnish the cake with this preparation and add strawberries to it. For the greediest, you can replace the mixture with melted chocolate-chestnut cream…
