Nicola Dinato, the chef at the Viva restaurant, wanted to pick up the essence of being outdoors and breathe fresh air into a dish called Aria Frita or Fried Air. The name is a bit misleading, as the crispy pastries are made from tapioca skin, which is first baked and then fried. However, there is some air in the cooking process, too, or at least a component of it; it is ozone. After tapioca is baked, it is soaked with ozone for 10 minutes, giving it a very special smell. After this special operation, the crisp "fried air" is placed on a bed of cotton candy, which Dinato hopes to bring fame to his restaurant.

The exotic dish has been heading the headlines for more than a month, mostly because of the news that Viva is offering the meal for $ 30; However, according to an employee at the restaurant commented on an article about the dish, he wrote that «fried air» actually offers free to all guests, as a welcome.
