Don't throw out leftover potatoes ... there's a delicious solution

Nobody cooks the right amount of potatoes, there are always leftovers, and they should not be left to spoil .. because potato leftovers are the beginning of a simple snack that you may not have made before, which is potato muffins.  

Great to put in a baby lunch box or as a side dish for the main meal.

Potato muffins are basically mashed potatoes that are baked with eggs, cheese, and vegetables.

To prepare six muffins, the chefs of the industrial organization of potato producers and dealers of Germany say you will need 300 grams of coarsely mashed potatoes.

Add 2 onions, finely chopped, white onion and green leaf.

In addition to 50 grams of each of grated cheddar, grated parmesan, an egg, three tablespoons of fresh cream and a pinch of salt and pepper.

Mix the mixture well and put it on a greased muffin tray.

Then bake it at 200 degrees in a preheated oven for about 15 minutes.
